A Junmai Daiginjo from Okayama, Taishounotsuru offers a blend of sweetness and richness. Made with polished Asahi rice, its flavor invites comparisons to ripe fruit. The sake features a subtle acidity (1.7) that perfectly complements its lightly sweet character (SMV -1). The brewery's unique 'Fukurozuri Tobintori Shizuku' method, a time-consuming technique of slow drip pressing, contributes to this smooth, elegant aroma. Enjoy this delicacy paired with seafood or light dishes for a distinctive dining experience.

Ochi Brewery Company

Okayama

Since our establishment in 1893, we have been committed to crafting sake using the water and rice from this region. We use mineral-rich medium-hard water drawn from the karst terrain within our brewery grounds. Our rice is sourced locally, known as Asahi rice, considered the essence of delicious rice. We fell in love with these elements early on and have been producing sake that embodies them ever since. Moving forward, we will continue to uphold the traditions of sake-making and further enhance our craft through meticulous attention to detail.
