In 1841, the first Imai Denbei began brewing sake with the natural water of Mount Akagi, a tradition upheld for over 170 years. Particularly, the daiginjo variety is renowned for its rich aroma and exquisite flavor, crafted with the utmost dedication by the brewmaster as a "work of art in sake." The sake "Hijiri" reflects youthful sensibilities, mostly drawn directly from the tank, hence retaining a refreshing and fresh taste with a hint of residual effervescence.
