Established in 1880, the brewery has a long-standing tradition of producing high-quality sake. In 2003, the fifth-generation owner, Hideki Kanemitsu, shifted focus from mass production to handcrafted, distinctive sake by discontinuing the use of automated equipment and reintroducing manual brewing processes. This led to the creation of the new brand "Kamo Kinshu," named after the local "Kamo賀茂" region and incorporating characters from his own name, "Kin金" and "Shu秀" Today, Kanemitsu Brewery continues to be highly regarded for its commitment to quality and innovation in sake brewing.
