Akishika Brewery is dedicated to a fully integrated process, from rice cultivation to sake brewing. Their own rice fields are farmed without pesticides or chemical fertilizers, using a sustainable cycle of fermented rice bran compost. This special sake is made from Omachi rice harvested in the Uemura Omachi field, a rare and highly prized variety. Brewed using the traditional Kimoto method, it captures the pure essence of the rice. After aging for approximately five years, it has developed deep complexity and a rich, layered depth—truly an exceptional Akishika sake.
