Akishika's flagship sake is a junmai brewed from organic rice and aged for at least 3 years in the mountainous inland of Osaka, about 45 minutes from Kyoto. It offers a wonderful complexity, with contrasting flavors of warm spice (nutmeg, star anise, root beer), toasted hazelnut, parmesan, Mexican cocoa, pear butter, and birch bark. Highly recommended to be served warm, as it becomes lighter in aroma and smoother in texture when heated.
