“Shikizaki Kantoka” is inspired by Kanto no Hanasaku, the first micro-season of Daikan in Japan’s traditional 24 solar terms. Kanto refers to butterbur, a plant whose buds begin to emerge from beneath the snow during the coldest days of winter—symbolizing quiet strength and the promise of renewal. Bottled as a genshu with an alcohol content in the mid-15% range, this sake presents a clean, well-balanced, and lightly dry profile. At the same time, it retains the depth, richness, and expressive acidity characteristic of the yamaha i method. Best enjoyed as a food-pairing sake, it shows particular charm from room temperature to gently warmed.
