Since its founding in 1880, our brewery has been dedicated to traditional and meticulous sake brewing methods. The key to making excellent sake lies in the quality of the rice and water. At Katayama Brewery, we use 100% of the underground water that has been springing from this area since the Meiji era. We craft our sake with heartfelt care, using traditional techniques passed down from the Echigo toji (master brewers).
