Founded in 1702, Ozawa Brewery's sake brand "Sawanoi" derives its name from the village of "Sawai," where abundant water flows like a marsh. The brewery draws its water for brewing from deep within a cave carved into the bedrock of the Chichibu old bedrock layer. The surrounding mountains, lush greenery, and pristine air of Okutama, along with carefully selected rice and refined craftsmanship, are all brought together to create each drop of exquisite sake. It is the brewery's creed to dedicate wholehearted sincerity and diligent effort from all employees to craft each drop of sake. Their goal is to produce sake that allows customers to feel the breath of nature in Okutama as they enjoy their drink.​
