This sake, presented with a special “Gratitude(Kansha)” label, is an excellent gift for fathers or anyone to whom one wishes to express appreciation. Brewed as a Junmai sake with rice polished to a level comparable to Ginjo, it opens with an elegant aroma reminiscent of apples, carrying both gentle sweetness and refreshing acidity. On the palate, a light, sweet-and-sour apple-like flavor touches the tip of the tongue, gradually developing into delicate sweetness and umami balanced with crisp acidity. A soft, rounded aroma rises as it passes through the nose, and the finish is smooth with lingering umami and a subtle touch of pleasant bitterness. Overall, it is a sake with restrained sweetness and umami, refined acidity, and a light, easy-to-drink character, yet it retains the depth and richness unique to Junmai sake.

The brewery draws its water for brewing from deep within a cave carved into the bedrock of the Chichibu old bedrock layer. The surrounding mountains, lush greenery, and pristine air of Okutama, along with carefully selected rice and refined craftsmanship, are all brought together to create each drop of exquisite sake. It is the brewery's creed to dedicate wholehearted sincerity and diligent effort from all employees to craft each drop of sake.
