Rather than adhering to predetermined brewing plans, the brewery emphasizes a natural approach that honors the local terroir. Under the guidance of Masayoshi Kikuchi, a representative of the Nanbu Toji guild—one of Japan's three major sake brewing guilds—the skilled artisans meticulously craft their sake with seasoned expertise and intuition.
