Since 2004, Tsukinoi Sake Brewery has been brewing Wa no Tsuki using JAS-certified organic sake rice from Ibaraki, carefully respecting the rice’s unique qualities throughout the brewing process. Under the guidance of the 8th-generation brewer, Naohiko Sakamoto, the original vision of creating a one-of-a-kind sake that is gentle on the body has grown even stronger. In 2022, the brewery welcomed master brewer Tatsuya Ishikawa, a leading expert in the traditional kimoto method, to join their team. Thanks to this collaboration, the Junmai Daiginjo Wa no Tsuki is now crafted in the kimoto style. Over the year since pressing the sake, the brewery has tasted it repeatedly at different serving temperatures, marveling at its complex character and expanding layers of flavor. To preserve its natural qualities, it is released as genshu (undiluted sake). This sake can be enjoyed in a variety of ways.
