“Hikoichi” from Tsukinoi Brewery carries the name of the founder, Sakamoto Hikoichi, and has been passed down through generations. Each head brewer has expressed their individuality by releasing a sake they personally found delicious under the “Hikoichi” name. This Junmai Daiginjo is crafted with Kamenoo rice, grown in Ōarai and developed over many years in collaboration with local farmers. Initially firm in character, it has matured through careful aging into a sake with rounded smoothness. The aroma is gentle, with a subtle sweetness reminiscent of malted rice. On the palate, it offers a soft, silky texture and a rich yet delicate umami of rice. A touch of acidity and sharpness gives structure, while the overall impression remains smooth and elegant. The finish lingers with depth and a hint of complexity. Versatile across a wide range of serving temperatures—from chilled to warm—this sake pairs exceptionally well with seasonal seafood dishes.
