They use spring water from the Akame Shijuhattaki Falls, which was selected as one of the 'Top 100 Famous Waters of the Heisei Era.' For rice, they source Yamada Nishiki grown in the Iga Basin under contract, as well as Bizen Omachi from Okayama Prefecture.
