This unique Junmai Daiginjo sake is crafted by Okuda Shuzoten using a special sake yeast, known as MS3, harvested from the wooden beams of the brewery. This special yeast enhances the umami and aromatic qualities of the sake. It has a delicate nose featuring notes of freshly cut fruit, and its light and dry flavor makes it incredibly enjoyable to drink. Additionally, while this Junmai Daiginjo is excellent when served chilled, it can also be gently warmed to body temperature for a different tasting experience.
