"Chiyo Midori – Dry Junmai Namazake" — a limited-edition sake from Okuda Brewery, where every drop of water has been drawn from the same well since 1675, nearly 350 years ago. The brewery's own house yeast "MS3" — cultivated from the very beams of the brewing cellar — gives this sake a gentle pear-like aroma. The taste is clean and refreshing, with a sharp, satisfying finish that earns it the title of "extra dry." Despite its boldness, it's remarkably smooth on the palate. The koji rice is polished to 50% — on par with junmai daiginjo standards — while the kake rice is milled to 60%, meeting junmai ginjo specs. A high-performance junmai sake that pairs effortlessly with a wide range of dishes.
