Kyokugen is the brewery’s flagship sake, created in 2013 by pouring in every ounce of skill and passion. This release was brewed in the new production facility completed in 2021. It is made from 100% Yamada Nishiki, polished over roughly 40 days down to an extraordinary 8% polishing ratio (meaning the outer layers are heavily milled away). Produced in small batches, the mash was carefully managed with fermentation temperatures controlled to 0.1°C increments. The result is a sake with more floral aromatics, a fresh yet sharply defined profile, and a character that sets it apart from typical daiginjo—inviting the drinker to experience the very pinnacle of sake craftsmanship.
