This sake is brewed using Kame-no-O, an heirloom rice variety known as one of the ancestral strains of modern sake rice. Designed to highlight the wild, untamed character of ancient rice, it offers a uniquely bold flavor profile. Yamada Nishiki is used for the koji to bring added depth and richness to the sake. As a freshly pressed, unfiltered, unpasteurized sake (namagenshu), it features a delicate natural effervescence. While it’s refreshing straight after opening, its true potential unfolds over time. As the flavors settle, you'll enjoy a beautifully balanced profile of mellow umami and acidity, followed by Kame-no-O’s signature clean, dry finish. Enjoy it chilled or gently warmed—either way, it pairs wonderfully not only with Japanese cuisine but also with a wide range of dishes.

Sanshoraku Brewery Company

Toyama

Established in 1880, Sanshouraku has been crafting sake that resonates with the lives of people in Gokayama. The harsh climate and terrain of Gokayama are essential elements in Sanshouraku's distinctive flavor profile. The brewing water, sourced from the primeval beech forests that have been passed down through generations to protect the villages from avalanches, plays a crucial role. The severe cold of winter and the region's significant snowfall contribute to the nurturing of Sanshouraku's sake.
