A limited-edition sake bottled directly after pressing, made from Yamahai Junmai. It features the aroma of banana from the No. 7 yeast, a gentle acidity derived from the Yamahai brewing method, and a slight bitterness and astringency typical of new sake. The carefully crafted koji imparts a mineral-like sensation, resulting in a flavor reminiscent of unripe bananas. Surprisingly, the bitterness of the new sake pairs well with food, especially fatty fish and meat. With time after opening, the gentle sweetness characteristic of Yamadanishiki rice emerges, offering a different facet of enjoyment.
