An elegant Daiginjo that goes above and beyond. Its 40% polish ratio reveals a crisp, smooth brew, where Hiroshima's refined water is used to draw out the full potential of the Yamada Nishiki rice. With an acidity of 1.2, you'll experience a balanced tanginess and a gentle sweetness from its SMV of 4, creating a beautiful harmony on your palate. Sip in the intriguing aroma, much like a pair of sal trees in bloom, hence its name 'Sarasouju'. Best paired with light meals like sashimi or tofu dishes. Brewer: Morikawa Brewery.

Morikawa Brewery Company

Hiroshima

Established in 1887 (Meiji 20), "Shirahong" brewery employs advanced techniques in cultivating yeast for alcohol fermentation using ultra-soft water. Following the Hiroshima Toji tradition of "soft water brewing," our sake is meticulously crafted to bring out the full richness of the rice, unique to ultra-soft water. This results in a sake that is soft and aromatic, with a gentle mouthfeel yet characterized by a refreshing sharpness.
