Kawakei Shoten was founded in 1902 (Meiji 35). Though a small brewery producing around 400–500 koku of sake, it has upheld the traditional yamahai brewing method since its inception. Today, the fifth-generation owner and toji, Masanao Kawana, leads the brewing process, working closely with his daughter, the future successor, to craft exceptional sake.
