The brewing of the new sake has begun, and the first batch of ginjo sake has been bottled as nama (unpasteurized) sake. This sake is characterized by its fresh and vibrant flavor, unique to unpasteurized varieties. Brewed during the relatively warm months of October and November, fermentation is more active than usual, resulting in slightly higher acidity compared to the standard ginjo. Enjoy the rich, full-bodied taste that only freshly pressed sake can offer!
