We polished the sake rice down to 55%, the same level as Ginjo sake, to bring out the best of the ingredients. Using the same brewing method as Ginjo, the sake was fermented slowly at low temperatures. After pressing, it was bottled without pasteurization. This sake combines the rich flavor of Junmai sake with the fresh taste of unpasteurized sake, resulting in a bold, crisp finish. Enjoy it chilled.
