Very unique taste - starts off sweet but then changes into an almost fermented flavor, an effect of the producer’s way of purposefully not processing the rice in the standard way. It has natural carbonation, adding a small kick to the smooth taste.

The freshness of a gentle breeze in the forest. Daytime when cool winds pass through the forest in summer. A gentle breeze flows through the trees. When you drink this, you first feel a slight carbonation, then a soft sweetness. At the end, the sweetness disappears gently. It is a pleasant sake with a slight bitterness in the mouth. I really love!!​

This is so fresh and balanced. It has fruity aroma like a melon. There is carbonation first, and mellow sweetness. Kaze no Mori series is one of the best sake that I bought in the US. And this Akitsuho 657 is very standard and balanced one from this brewery. You should definitely try!
