Nanatsuyu is a sake rice developed in Nara—the first of its kind—well-suited to the basin climate of the region. With its exceptionally large shinpaku (starchy core), it is highly regarded for brewing. This sake offers a balance of rich sweetness and refreshing acidity. The signature gentle effervescence of Kaze no Mori creates a lively entry, followed by layers of juicy sweetness and crisp, clear acidity—reminiscent of fresh strawberries. A hint of subtle bitterness adds contrast, while the finish is light, clean, and pleasantly brisk.

The brewery was started in 1998 with the desire to make sake made from local rice, freshly pressed, for the local people to enjoy. The tradition of Nara sake, established 500 years ago, has been modified with modern technology, and we will continue to take on the challenge of creating the next generation of sake, sake that can only be made in this day and age.
