The brewing of sake by Nenogawa began sixteen generations ago in Keio 3, using the rice and spring water on the premises. The brewery combines traditional sake brewing techniques with its own knowledge of brewing and food culture. The company is renowned for its rich and delicate sake brewing. In order to maintain the high quality of every sake produced, Inaba Sake Brewery uses a manual brewing process that cannot be done by machine, from rice washing to fermentation, koji making, and pressing, all based on calculations.
