This limited Daiginjo has been made entirely by hand, from rice washing to hiire (second heat sterilization). It has soft acidity and is a silky sake with a nice mouthfeel. You can feel a smooth going down and elegant, sweet aroma. The label features an "annual solar eclipse," symbolizing "special sunshine." It is recommended to serve well-chilled, using rounded vessels to enjoy the aroma. It pairs well with marinated octopus with herb flavor, Vietnamese fresh spring rolls, and thinly sliced white-fleshed raw fish with citron-flavored ponzu vinegar.

Kirinzan Brewery Company

Niigata

Kirinzan Sake Brewery, founded in 1843, has a 180-year history of making plain sake that can be enjoyed by local people as part of their daily lives. The brewery is committed to "local sake," and all of its sake is made with rice grown in Okuaga, water from the Mikagura mountain valley, and the harmony of the people from the brewery staff to the customers. We believe that local sake is created by the harmony of the brewers and customers. We aim to achieve this.
