Crafted as a tribute to the late Master Shinsaku Sugiyama, this sake is brewed with Kyokai Yeast #6, the oldest active yeast strain, originally isolated at Aramasa in Akita. With a 90% polish rate, this bold sake captivates red wine enthusiasts. Its complex aroma begins with grapefruit pith and evolves into dark cocoa, miso, dried shiitake, and finishes with notes of dark cherry skin. Enjoy chilled or at room temperature, paired with well-seasoned steaks, earthy mushrooms, dark leafy greens, or dishes featuring fish sauce for a harmonious culinary experience.

Kikkawa Jozo Brewery Company

Kanagawa

This sake brewery was established in 1912. They draw pure underground water from three wells fed by the abundant springs of Afuriyama (another name for Tanzawa Ōyama). This high-quality water is used in every step of the process, from washing the rice to brewing, allowing them to craft sake with a strong focus on premium ingredients.
