This sake is made from Yamada Nishiki rice, polished to 30% from the top A-grade region in Hyogo Prefecture. Using two types of yeast, it achieves the floral aroma of daiginjo and the crisp finish of junmai. Only the 'nakadori' (middle cut) of the press, which has the best aroma and flavor, is specially selected and stored fresh to preserve its vibrant taste. Advanced fermentation techniques balance the five basic tastes—sweet, sour, salty, bitter, and umami—creating a complex, well-balanced flavor that's perfect with food.
