Den Blanc is a unique sake crafted with white koji, introducing a bright citrus-like sourness paired with soft umami notes. White koji, typically used in shochu production, naturally produces higher levels of citric acid, allowing the shubo (yeast starter) to be made without added lactic acid. Using Calhikari rice grown by Rue & Forsman Ranch, it offers aromas of young pineapple, green apple, and a touch of cream. The palate is juicy and tart, with a balanced umami and minerality, leading to a rich, mouth-watering finish.

Founded in 2017 by Yoshihiro Sako, Den Sake Brewery is the first sake brewery in Oakland, California. Sako brews small-batch sake using traditional Japanese brewing methods and proprietary techniques adapted for the California climate. Den Sake is a pure rice sake made from single-origin Cal-Hikari rice from Rue & Forsman ranch in the Sacramento Valley. We think you will find that Den Sake is a perfect complement to local and Asian cuisine.
