For Kinowa, reducing residual sugar too much can make the woody aroma and refreshing qualities feel slightly astringent. To balance this, a touch of sweetness is intentionally retained, making it a slightly sweeter expression within the Shichihonyari lineup. As a result, this sake achieves a natural harmony where the wood nuances, umami from rice, sweetness, and acidity blend seamlessly. While it shares the Tamasakae 60% specification with the classic Shichihonyari Junmai Tamaei (Green Label), it offers a lighter sweetness and acidity, combined with the cool, fresh character of the wooden barrel. At the same time, it still retains the unmistakable essence of Shichihonyari.
