"Shizuku" means "drops," reflecting the process where the sake is allowed to drip naturally from cloth bags filled with the finished brew, without pressing. Only the middle portion is selected for bottling. While this is a junmai daiginjo, it still embodies the Shichi Hon Yari style, known for its earthy, dry, and vibrant characteristics. Ethereal and delicate, following the shizuku method, yet showcasing the toasty notes of brown butter characteristic of Shichi Hon Yari's style. Enjoy it on its own, gently chilled, or paired excellently with triple cream cheese and fatty tuna.
