Founded in 1688 (Genroku 1), this brewery uses 100% of the rare sake rice Bizen Omachi, known as a "phantom rice." The brewing water comes from the famous Omachi Cold Spring, selected as one of Japan's top 100 natural waters. The resulting sake features the rich umami flavor typical of Omachi rice, with a dry taste and a rounded, smooth finish that matures beautifully in the autumn.
