SENKIN was founded in 1806 in Sakura City, Tochigi Prefecture. "Senkin" means "crane," a bird that serves hermits, and has been passed down from generation to generation as the brewery's name. The rice is harvested from rice paddies located on the same water vein as the brewery's brewing water. The concept of the brewery is to create terroir-oriented sake that makes the most of the local climate. In addition, the brewing method of the Edo period has been reproduced in the modern age. The brewery's concept is to create a classic, supernatural sake using the "EDO STYLE" method, which is completely yeast-free, kimoto-zukuri, organic raw rice, and wooden vats.
