On January 1, 2024, a devastating earthquake struck the Noto Peninsula in Japan. Just as the region was beginning to see a path toward recovery, torrential rains brought yet another blow, compounding the damage and delaying progress. In response to these repeated disasters, the renowned sake brewery Senkin in Tochigi Prefecture has once again released “Hope”, a special sake created to support disaster relief efforts. Hope is a unique assemblage, carefully blended from several of Senkin’s signature labels. Each sake contributes its own strengths, complementing one another to achieve a refined and harmonious profile that surpasses the sum of its parts. SENKIN was founded in 1806 in Sakura City, Tochigi Prefecture. "Senkin" means "crane," a bird that serves hermits, and has been passed down from generation to generation as the brewery's name. The rice is harvested from rice paddies located on the same water vein as the brewery's brewing water. The concept of the brewery is to create terroir-oriented sake that makes the most of the local climate. In addition, the brewing method of the Edo period has been reproduced in the modern age. The brewery's concept is to create a classic, supernatural sake using the "EDO STYLE" method, which is completely yeast-free, kimoto-zukuri, organic raw rice, and wooden vats.
