Experience the 'Genshu ShiroNigorizake HanakouboJikomi', a delightfully unfiltered sake from Gifu prefecture. With an acidity level of 1.7, it presents a slightly tangy balance to its naturally sweet flavor (SMV: 4). Its divine cloudy white appearance is accompanied by an effervescent burst of floral aroma, resulting from the unique 'Hanakoubo' yeast fermentation. Crafted at Fuya Hara Brewery, this charming brew pairs exceptionally well with spicy or creamy dishes. Revel in the unique craft of traditional Japanese sake.

Nunoya-gen Shuzojo Brewery Company

Nunoya-gen Shuzojo Brewery Company

Gifu

Founded in Genbun 5 (1740), this brewery is led by the head brewer who personally oversees the brewing process. They focus on using locally sourced rice and water from Gifu Prefecture, as well as skilled craftsmen dedicated to their art. By brewing with natural “flower yeast” isolated from wild flowers, combined with groundwater drawn from a well on their property that flows from the Hakusan mountain range, they create sake with a rich aroma and flavor distinct from traditional sake.
