This Junmai sake perfectly embodies Tenmei's core concept of 'pure and transparent sake.' For the koji rice, we use Itashita-grown Yamada Nishiki to enhance flavor vibrancy, while three different types of rice are used for the rest. We use Gohyakumangoku for the first stage to promote yeast growth, Kamenoo in the second stage to add depth of umami, and Yumenoka in the final stage to bring a gentle roundness to the overall flavor. The sake is brewed using two distinct yeasts, our house yeast N and Utsukushima Yume yeast (F701), then blended to create a one-of-a-kind taste. With a subtle, pleasant citrus-like aroma, this sake is smooth and refined on the palate. Its fresh, lively umami is smart, clear, and elegant, while also having the versatility to pair well with a wide variety of dishes.
