"Yuki no Sei" rice produced in Niigata Prefecture is polished to 28% and brewed. It takes three days and nights to polish the rice to that level so that it does not shatter. The oval shape of the unpolished "Yuki no Sei" rice is rounded when it is used for brewing, as if it were a full moon shining in the sky. Because of the time and effort put into the rice, the brewing process is of course very careful, and the rice is fermented at a low temperature for about one month. It is a sake to be enjoyed together with the Mid-Autumn Moon. Please enjoy its graceful aroma and gentle flavor while lightly chilled.
