This Junmai Daiginjo-shu is brewed using the traditional Yamahai brewing method, which maximizes the power of lactic acid bacteria. It has a robust flavor unique to Yamahai brewing, but also features a refreshingly sharp acidity, a subtle sweetness from the rice, and a sharp, light throat-clearing taste. It goes well with savory dishes such as grilled meat and fish. It is best served slightly lukewarm (warmed) to enhance its flavor. We also recommend drinking it cold or at room temperature.
