Kobayashi Sake Brewery, founded in 1878 in Sapporo, is one of Hokkaido's oldest producers of the 'Kitano Nishiki' brand of sake. In 1901, they relocated to their current location to take advantage of the abundant water from the Yūbari River. Today, they lead the way in using Hokkaido-grown rice and aim to create a truly local sake, made entirely from Hokkaido’s people, rice, and water.
