Inspired by the golden rice fields of autumn harvest, this sake is crafted from Shinshu-grown rice, polished only moderately to let the grain’s natural character shine through. On the palate, its rich umami spreads generously, blending smoothly with acidity to create a rounded and pleasant finish. When gently warmed, the flavors deepen further, offering an even greater sense of balance and richness. Its mellow umami and silky texture pair beautifully with dishes that share depth and savoriness. Enjoy it with lean tuna sushi, chicken tsukune skewers, sukiyaki, stir-fried wagyu with oyster sauce, savory okonomiyaki, or gratinéed scallops.

Miyasaka Brewery Company

Nagano

Founded in 1662 in the Japan Alps of Nagano Prefecture, Masumi owes its quality to the region’s cold climate and pure water. Named for “The Mirror of Truth,” a national treasure at the nearby Suwa Taisha Shrine, Masumi is famous as the birthplace of the No. 7 Yeast, which it uses to produce food-friendly sakes with exceptional balance.
