This is one of masterpieces of this sake brewery. It's brewed with top-grade Yamada Nishiki rice and Masumi No.7 yeast, then drip-filtered one drop at a time. It has an elegant aroma like white peaches, bananas, citrus with floral accents. A mild sweetness and comfortable acidity make this sake have gentle and smooth texture. Try it with the perfect accompaniment of steamed shrimp gyoza, salt-crusted snapper and scallop carpaccio. Recommend to serve chilled.

Miyasaka Brewery Company

Nagano

Founded in 1662 in the Japan Alps of Nagano Prefecture, Masumi owes its quality to the region’s cold climate and pure water. Named for “The Mirror of Truth,” a national treasure at the nearby Suwa Taisha Shrine, Masumi is famous as the birthplace of the No. 7 Yeast, which it uses to produce food-friendly sakes with exceptional balance.
